If you like to get adventurous with your Pizza toppings, you’re going to love this Summer Peach Pizza Recipe with Roasted Grapes, and Ricotta Goat Cheese.

New Yorkers, look away. This is a far cry from that indulgent greasy triangle of joy you’ll find in the corner pizzerias. Instead, this is a pizza that fully embraces the adventurous spirit, and celebrates the idea of uncommon flavors.

Peach, on Pizza?!

Admittedly, this one came from left field. I was shooting pizza’s in the studio with food stylist Stephanie Greenwood, and was in charge of the shopping this time. My first thought was of the aesthetic, and figured peaches would be a bold, graphic look. Then the more we thought through and developed the flavors, the more they made sense. I love pizzas with pineapple and canadian bacon, or fig and prosciutto. So shouldn’t peaches hit the same note? This one is a little sweeter without the meat, but it also feels lighter and refreshing in a way that isn’t usually experienced with pizza.

More Roasted Grapes Please

Grapes are well known for their ability to fulfill the supporting role in many dishes. Not always stealing the show, but always ready to carry more than their fair share of the weight of a dish. When roasted, they take on a whole new light, and develop a depth of flavor that can lean sweet or savory. A perfect example can be found in our roasted grape galette. They play their part in this pizza by adding flavor and another textural component.

Caramelized Onions

Caramelized onions are a wonderful thing. They add depth to countless dishes, and can be made in large batches, frozen, and used for months! If you’ve never caramelized onions, don’t let this part of the recipe throw you for a loop! Your house will be filled with an amazing aroma, and you will be rewarded with a panful of little flavor bombs, ready to take you burgers, pizzas, meats and more to new heights!

Pizza Dough

We’re keeping this post quick, and are focusing on the toppings, so for this one I just recommend using you’re favorite dough recipe. We will post our recipe soon, but for now, I encourage you to use whatever dough you want. A nice sourdough crust, not too thin, and not too thick is perfect. If you don’t feel like making one from scratch, you can buy pretty good pre made dough balls from trader joe’s or central market. If you can’t find them, check the freezer, and if you still have trouble, ask an associate!

Description

Peach belongs on pizza, and this recipe proves it! Surprise your tastebuds with this delicious flavor combination.


Ingredients

Scale
  • Pizza Dough
  • Peach Jam
  • Shredded Mozzarella
  • Ricotta Goat Cheese Mix
  • Peaches, sliced
  • White Onion, thinly sliced
  • Grapes
  • Fresh Herbs, such as Basil for garnishing
  • 1 1/2 teaspoons Olive Oil

Instructions

  1. Preheat Oven to 425 F
  2. Place a medium skillet over medium low heat. Once hot, add the olive oil and onions, stirring to coat.
  3. If the onions seem to be browning too quickly, reduce heat.
  4. Cook stirring occasionally for about 10 minutes. Season with salt and pepper and continue cooking until onions develope a nice caramel color
  5. Roll out the dough onto baking sheet or pizza stone, and spread a thin layer or jam. Top with the cheeses, peaches, grapes, and caramelized onions
  6. Bake till crust is golden and cheese is melty. About 20-25 minutes
  7. Garnish, slice, and try to share!

Notes

You can take the onions as far as you want by cooking longer to develop a deeper caramelization, or pull them sooner to leave a bit more bite. Also, keep an eye on the pizza as it cooks. Depending on your dough, it might be done sooner, or take a little longer.
